Fluid and Immutable

The Lake Hachirogata was once the second largest lagoon in Japan.
A passionate dream driven by the 20th century has been reclaimed most part of the lake.
However, long before we were born, the lake was
our life,
our culture,
our history,
and our place to belong.
Now that most of the lake has been reclaimed.
Do we stay here or dare?

Our mission is
to enjoy the fruits of the still abundant
the Lake Hachirogata's fishery resources,
to carry on the 8,000 years of history,
and to pass on the culture of Hachiro Lagoon to future generations.

Who We Are

The Oldest and Finest Tsukuda-ni in Hachirogata

Tsukuda-ni is a savorily and sweetly simmered aquatic products, which is a traditional and indispensable Japanese food. It requires a high level of skill to produce due to its perfect balance of savory and sweet and constantly changing nature. Our company was founded in 1897 in Showa-machi, Akita Prefecture. In the Hachirogata area, where there are over 100 Tsukuda-ni companies, our company has continued to carry on the traditional Tsukuda-ni, and has established itself as an oldest and finest company in the Hachirogata Tsukuda-ni industry. The knowledge accumulation since 1897 has enabled to maintain the finest quality despite constantly changing nature.

The Lake Hachirogata

Hachirogata, Where the Virgin Landscape of Japan Remains

Akita Prefecture is located in the northeastern part of Japan and represents an exotic area of Japan with rich nature and ethnic culture. The harsh nature, with heavy snowfall in winter and extreme heat in summer, brings abundant harvests to the people of Akita, and the virgin Japanese landscape of living in nature remains vividly.

Tragedy of the 20th Century - Reclamation Project of the Lake Hachirogata -

The Lake Hachirogata, which once establised as the second largest lake in Japan, has a history of being reclaimed for rice fields after World War II, and the traces of reclamation are still clearly visible in the topography. Chidasaichi Shoten still lives with the remaining lake, and has inherited the culture left behind by its predecessors, delivering tsukudani of the highest quality to all of Japan and the world.
